We went to the Palo Duro Canyon State Park today. I hadn't heard of it, but apparently it is the 2nd largest canyon in the US. It was way too cold and windy to explore, so we will definitely have to come back in the spring.

Tonight we went to The Big Texan. It's a huge steakhouse/tourist trap here in Amarillo. They even had a 72 oz streak eating contest. Pretty gross, but amusing. I know it's a funny place for non-meat-eaters to go, but their non-meat foods were delicious.

So we did something a little different yesterday... we went to a NASCAR race. I never would have thought I would attend one (the extent of my racing knowledge is limited to Mario Kart), but our friend Nathan and his mom had 2 extra tickets and asked us to go. It was a totally new experience, lots of new sights and sounds and smells.

After work Trey and I stopped at an Asian grocery store. We're driven by it a so many times that we decided to just stop and see what they had. There were so many vegetarian and soy things! Of course, there was a meat market where they were killing fish and it smelled a little off, but they did have tons of fun things. We were in there for almost an hour looking at everything.

Earlier today we went to the Texas State Veggie Fair which was like a mini State Fair with all vegan food. It was fun and it happened to be a perfect day to be outside. This evening I made pumpkin cupcakes and we watched the Saints dominate. I love fall!!!!

This weekend we went to Jordan & Mallory's cabin in Quitman, TX with a few of our friends. We rode 4-wheelers, shot potato guns, and made s'mores. It was a lot of fun and a welcomed break from a long week of work.

Today we went to a Greek restaurant after work to unwind from a long week. I want to go back to Greece so bad! Also, today is the first day of Autumn and strangely enough it was actually cool outside.

On our way out of town we stopped for lunch and enjoyed some great fried fish.
Before we crossed back over into Texas we stopped at a casino. It was a fun way to break up the drive.

Today is our one-year anniversary!!!!!!!!!!!!
Looking out the window to this view is so relaxing. I think it was in the 60's this morning. Waking up without an alarm clock and sharing breakfast in the early sunshine on our patio was just amazing.
Today we went to a local winery and browsed around some of the local shops for most of the afternoon.
We ended the night by enjoying the cool breeze outside and grilling salmon & corn on the cob.

Our big plans for today included a canoe trip down Mount Fork River.
It was a lot of fun and I can't believe we never tipped over.
Oddly enough we had some friends who happened to be vacationing in Broken Bow, so we met them for dinner tonight. Oklahoma Mexican food is nowhere near as good as Texas Mexican food, believe it or not. The giant blue giraffe was a nice touch though.

Every weekend our local PetCo hosts "Kittenpalooza" where they have lots of kitties for adoption. We go every so often and we play with all the kittens. For the last 2 weeks they have had this adorable calico kitty who purrs when you look at her and she's the silkiest kitty ever. If we didn't already have 2 cats we would've brought her home today. Adopt!!!

Our good friend Jesse just moved to Dallas, right down the street from us. We had a nice little house warming Mario Kart party at his new place.

For 4th of July weekend we went to Austin and went camping at Lake Travis with a bunch of our friends. It was hot out, but we had a lot of fun anyways. The park is always pretty, even in the middle of a drought.
