Happy Valentine's Day!!! Although we celebrated this past weekend we still wanted to do something special tonight. We bought different cheeses to snack on and made a delicious creamy chick'n pasta for dinner and had apple crumble for dessert.

Date night!!! Tonight we made Hawaiian BBQ Tilapia, scalloped potatoes, and green beans. My parents used to have to force me to finish my green beans, now I buy and eat them voluntarily. I guess I'm growing up!

For date-night dinner this week we made cheese tortellini with "chicken" in a pink sauce, it was so delicious. I can't wait to eat the leftovers!

Tonight we had tuna steaks and they were awesome. I made an amazing marinade and Trey grilled them with one of our wedding gifts. Prettttty delicious.

While Trey was at work I was doing wifey things like vacuuming and cooking. I thought Trey would appreciate having dinner ready when he got home from work. Knowing traffic would be bad because of the icy roads, I planned to have it ready a bit later. Little did I know it would take him three and a half hours to get home! That's insane. Oh, and more snow is coming tonight.

I was going to surprise Trey with a salmon dinner when he got home, but then I realized we only had one small fillet in the freezer, so we had a half-fillet side to the twice baked potatoes. To make up for it we made corn and noodles. So good. I love twice baked potatoes!

Another Thursday, another date night! This time we made burritos with queso and watched a movie at home. And if you didn't already know, Julio makes a delicious tortilla chip (if you don't mind MSG).

Egg-in-the-hole-in-the-bread makes for a yummy anytime snack. As a twist I dusted mine with powdered sugar because I like everything just a bit sweeter than it should be. Mmmmm...
